New recipe

We had some friends over tonight for dinner and I made a wonderful new recipe. I found it on a recipe blog that I like. They really were good. I will definitely make these again. They are sweet but tangy with a kick. Below is the recipe I found as is, but in italics is what I did to the recipe. If you are looking for something new, try these!

Honey Lime Chicken Enchiladas

  • 6 TB honey
  • 5 TB lime juice ( 1 large lime)
  • 1 TB chili powder
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 3 chicken breasts
  • Montreal steak seasoning ( packets sold by taco seasoning, etc)
  • 1 can black beans
  • 8-10 flour tortillas
  • 1 lb Monterrey jack cheese, shredded
  • 16 oz green enchilada sauce
  • 1 Cup heavy cream ( or whole milk)

Mix first four ingredients together and set aside. Place chicken in a saute pan and season with half package of Montreal seasoning, and cook till almost done, add honey lime mixture to chicken pan and shred chicken. saute until chicken is completely cooked. Pour half of enchilada sauce on bottom of 9 x 13 dish. Fill flour tortillas with chicken, beans, and cheese, save some cheese for top. mix the remaining enchilada sauce with the cream and leftover sauces from the chicken. Pour sauce on top of enchiladas (they will be swimming in liquid its okay) and sprinkle with cheese. Bake 350 for 20-30 min until brown and crispy on top.


* I doubled the recipe and used 6 chicken breasts. I put the fresh (not frozen) chicken breasts and 1 packet of the Montreal seasoning in the crock pot in the morning and let them cook. I then shredded the chicken and made the marinade, mixed it all together and put it in the fridge for later. I was trying to save some time. The recipe says to mix in remaining sauce from the chicken in with the sauce, I didn't have any remaining sauce from the chicken. I mixed in sour cream instead of the cream or milk in with the green enchilada sauce.
