Tasty Goodness!

I found a really yummy recipe in one of my MIL's cookbooks, so I thought I would share. It is soo easy and so delicious!!

Chicken Artichoke Casserole

1/2 lb sliced fresh mushrooms
6 tb butter, divided
4 boneless chicken breasts, skinless
1--14 oz can chicken broth
1-- 7.5 oz artichoke hearts, drained
dash salt
1/4 c flour
3/4 c light cream
1/4 tsp salt
1/8 tsp pepper
1/2 c grated parm cheese
1/2 tsp dried rosemary

Saute mushrooms in 2 tb butter for about 2 mins, set aside. Cook chicken breasts in simmering chicken broth on low heat for about 30 min or until cooked through. Drain broth, reserving 3/4 c. Cut chicken into cubes and place chicken and drained artichoke hearts in a greased 8x8 pan, lightly salt, set aside. In a saucepan melt 4 tbs butter, stir in flour until well blended. Add cream and reserved 3/4 c broth and stir constantly over med heat until thickened. Stir in salt, pepper, parm cheese and rosemary. Pour over chicken and artichokes and mix well.
Bake at 325 for 30 mins. Remove from oven and garnish with sauteed mushrooms.

Try this recipe, it will not disappoint. I served it with a side of rice! Let me know what you think.

That looks completely overwhelming that I didn't even finish reading the ingredient list. I think I got to "butter, divided" and my brain shut off. What is divided butter?! I think I'll stick to tacos. :)
