Absolutely THE Best Yet!

One thing about me that you might or might not know, is that I love Banana Bread. Warm, moist, and buttered banana bread. I THOUGHT I had found the.one. Recipe, that is. I either don't cook it long enough and it is too mushy or it's not done in the middle but brown and crispy on the outside. My girls love bananas but usually in spurts. So, I had been collecting brown bananas and today decided to do something with them. I found, so far, THE BEST recipe. You have to make this recipe. Right Now! Go, you will want to eat the whole pan. I had to put it out of Avery's eyesight or she would still be begging for it at midnight. Yes, it is THAT good.


Sour Cream Banana Bread

1/2 c butter
1 c sugar
2 eggs
1 tsp vanilla
1 1/2 c flour
1 tsp baking soda
1/2 tsp salt
1 c mashed bananas (about 3 bananas)
1/2 c nuts
1/2 c sour cream

Cream butter, sugar, eggs and vanilla. Add dry ingredients, then bananas, nuts and sour cream. (Mix together by hand, makes the bread more dense!) Poor in greased loaf pan. Cook at 350 for 1 hour.

**** Helpful hints**** I doubled the recipe to make 2 loaf pans. I also cooked it at 350 for 30 mins and then covered with tin foil and cooked for 30-40 more mins to keep the tops from getting tooo brown. I don't like crunchy banana bread. I also live in a higher altitude, so adjust to where you live and just poke with toothpick to check for doneness (if that is even a word).
